This is my first recipe post! I love to cook and try new recipes, and lately, my daughter has shown an interest too. She likes to put her ‘recipes’ together completely from scratch. I’ll come into the kitchen and there is flour everywhere, eggs all over the table, frozen blueberries are rolling on the floor, and the sprinkles container has noticeably less sprinkles in it. Some of her concoctions are really good, and I encourage her to keep testing her other ‘recipes’ that aren’t quite so good! Well, here is a cucpcake recipe that we did follow a recipe to… and they are DELICIOUS! We made these for her birthday last month and they were a huge hit at her party. We found this recipe in a book titled It’s Raining Cupcakes by Lisa Schroeder that we read together this summer. We thoroughly enjoyed the book, and even more, we thoroughly enjoyed the cupcakes. For the Cupcakes:
1c. all-purpose flour
3/4c. granulated sugar
1/2tsp.baking soda
1/2c. butter or margarine
1/3c. water
3 T. unsweetened cocoa
1 egg, lightly whisked
1/4c. buttermilk
•Preheat oven to 350 degrees. Line muffin tins with liners. Mix together flour, sugar and baking soda with a whisk. In a saucepan, melt the butter with the water and cocoa on low heat. When completely melted, remove from heat. Whisk egg in a separate bowl and add to the flour mixture, along with the butter mixture, buttermilk and vanilla(this was omitted from the actual recipe but I put in about 1/2 tsp). Beat with mixer on low until smooth. Fill liners half full. Bake 18-20 minutes, or until toothpick inserted into the center comes out clean. Cool completely before frosting.
Frosting:
1/4c. softened unsalted butter
1 1/2c. powdered sugar
1/2tsp. vanilla
7-oz. jar marshmallow cream
4 graham cracker squares
15 chocolate kisses
•Beat butter, powdered sugar and vanilla until smooth. Add marshmallow cream and mix, and then spread onto cooled cupcakes.
•Place a chocolate kiss on top of each cupcake then sprinkle crushed graham cracker crumbs across the top.
